Summer might be long gone, and the first snow has hit the ground, but despite the chilly weather, this cold desert is so quick, easy and delicious I just had to put it on the blog and share it with everyone.
probably the best way of describing it. As with every recipe I put on my blog this also
conjures up happy childhood memories of long school summer holidays at home, splashing
about in the Mediterranean sea, playing in my grandparents street with cousins and frenzy
and of course it eating lots of granita.
It’d been years since I last had some, and luckily came across a recipe in one of my recipe books when I was trying to find a quick desert that I could do for a dinner party for my girlfriends, and it was a great hit. I made a lemon flavour granita and served it on top of a warm lemon cupcake. My girlfriends were incredibly impressed and delighted.
I now make a different fruity version (including alcoholic ones) every time I have some spare
time. With just one spoonful I’m transported to childhood and desert heaven.
And here's how to make it:
Ingredients:
500ml water
125grms sugar
300grms (fruit of choice - squashed/ puréed & seived, if using oranges or lemons grate & use the zest too)
Method:
* Heat the water & sugar over low heat until the sugar have dissolved.
* Bring to the boil and allow to cool.
* Combine the fruit juice to the the water & sugar mixture, place in a shallow container and
freeze until mixture is solid.
* When ready to serve, place the botttom of the container in very hot water for a few
seconds.
* Turn the frozen granita mixture on to a chopping board and chop it into chunks.
* Place the chopped chunks in a food processor, and process until it looks like crushed ice
or leave consistency slighlty chunkier if prefered.

Festive Tip: For a festive twist, use frozen cranberries and drizzle a shot of vodka/rum over
the granita before serving. Granita would be a fab desert for a Christmas Eve or New Year's
Eve Dinner Party.
